アスパラガスのスープ。
Creamy Asparagus Soup
1 bunch asparagus (trim the pale ends then slice into 2 inch)
1/2 onion (small diced)
2 small potatoes (peel and cut in 1 to 2 inch cube)
1 garlic clove (chopped)
1 basil stem
vegetable stock
salt & pepper for seasoning
*optional soy milk
Directions:
In a soup pot, heat oil over medium heat. Add onions, cook and stir until onion is tender. Stir in garlic, asparagus and bay leaf; cook for 3 minutes. Stir in potato, and add vegetable stock or water. Bring to a boil. Reduce heat, and simmer for 12 to 15 minutes with lid on. Puree them with hand blender and season with salt and pepper. If you like creamy soup you can add 1/2 cup of soymilk. Serve with fresh herbs.
